Spinach and Mushroom Omelette


  • 3 Eggs
  • 3 Button Mushrooms
  • ½ Cup Spinach
  • 1 Tablespoon Olive OilMethod
  • Whisk eggs together, pour into a medium-high heated pan with the olive oil. Using a spatula, tilt the pan and push egg forward and let the liquid egg fall to take its place, go round the pan and continue to do this until no more liquid egg can run. Place the chopped mushrooms and spinach over the omelette and place in the oven for 5-7 minutes until cooked.
