Spinach and Zucchini Frittata


  • 1 Large Zucchini
  • 1 Cup Spinach
  • 5 Eggs
  • ½ Teaspoon Salt and pepper
  • Olive Oil


Grate zucchini, finely dice Spinach and place in a large bowl with rest of ingredients. Pour into an oven proof dish lined with baking paper. Bake at 180/350 for 20-25 minutes or until eggs are fully cooked.
