Orange Almond Cake


  • 2 Oranges
  • 6 Eggs
  • 2 ½ Cups Almond Flour
  • 1 Cup Coconut Sugar
  • 1 Teaspoon Baking Powder


Place oranges in a pot and cover with water, boil for 15 minutes until soft.

Let the oranges cool then blitz in a processor for 30 seconds. Now add the eggs, almond flour, sugar and baking powder and blitz for another 30 seconds or until smooth and combined. Pour mix into a lined muffin tin or a greased silicone mould and bake at 180/350 for 20-25 or until a clean skewer comes out with poked.
