Curried Cauliflower


  • ½ Cauliflower
  • 1 Carrot
  • 1 Cup Baby Spinach
  • ¼ Cup Roasted Cashew Nuts
  • ½ Cup Raisins
  • 1 Teaspoon Curry Powder
  • ½ Teaspoon Salt and Pepper
  • Olive Oil


Cut the cauliflower into small florets and the carrot into thin slices and place in a bowl with the curry powder and enough olive oil to lightly coat. Toss until the curry and oil have coated the vegetables. Place on a lined baking tray and roast for about 15 – 20 minutes at 180/350. Once cooled, place in a bowl and add the spinach, nuts, raisins and seasoning. Coat with a little extra olive oil if needed.
