Chicken Zucchini Meatballs

INGREDIENTS

  • 300g Chicken Mince
  • 1 Large Zucchini
  • 1 Small Red Onion
  • 2 Eggs
  • 1 Tablespoon Diced Coriander
  • ½ C Ground Almonds
  • Salt and Pepper

METHOD

Place chicken, grated zucchini, finely diced onion, coriander, and rest of ingredients into a mixing bowl and mix thoroughly. Roll into tablespoon size balls and place on a lined oven tray.

Bake at 180C/360F for 20-25 minutes until browned and cooked throughout.

Serve with a fresh garden salad.
