Bacon & Egg Pies


  • 6 Eggs
  • 6 Rashers of Bacon
  • 1 Stalk Spring Onion
  • 1 handful spinach leaves
  • Salt and pepper


  • Grease a muffin tray with butter, then line with bacon, if using streaky, roll around the side of the mould and use any extra as a bottom. Dice up spring onion and spinach and evenly spread between moulds. Whisk eggs in a pouring jug with salt and pepper and pour into mould evenly. Bake for 15 – 20 minutes on 180C/360F.
